Apple Pay on the Watch works without being within range of your iPhone.
You do need to have the watch on your wrist and unlock your phone to enable it, so this whole point is moot. If you lose your watch nobody will be able to use ApplePay on it.
Yep, the Watch can be in airplane mode and you can use Apple Pay (same with the iPhone). The NFC terminal has the network connection that communicates with your credit card company/bank.
