You might know most of these, but chances are you don’t know all of them. I didn’t.
My favorite:
Most people probably type a number or a symbol by tapping the 123 button, tapping the number or symbol you want to type, and then tapping 123 again to go back to the letter keyboard. But there’s a much faster way. Instead, touch the 123 key and hold your finger down on the screen. Without lifting your finger, move it to the symbol or number you want to type and then lift it from the screen.
This trick also works for the Shift key — touch your finger to the Shift key, move it to a letter, and you’ll quickly get the appropriate capital letter.

Additional tips for capitalizing words:
On iOS 8, double-tap the word to select it, and then single- or double-tap the Shift key to get first-letter or whole-word capitalized suggestions, respectively, in the QuickType area above the keyboard.
For iOS versions prior to iOS 8, there’s still a trick for capitalizing a first letter that’s not quite as fast as that, but it’s still easier than trying to precisely position the cursor between a word’s first two letters:
Tap once near the front of a word to position the cursor right in front of its first letter. Type a capitalized version of the word’s first letter. Tap away from the word and then back on it, or quickly tap twice on the word to select it and choose “Suggest.” The pop-up suggestions should include the properly spelled, capitalized version of the word. To un-capitalize a word’s first letter you can do the same thing, but you’re going to have to double-tap to select it and then choose “Suggest,” as just tapping away and then back on the word appears to not bring up the suggestions in that case.
